The unique concept from the Edo period gives the Edomae guest a completely new perspective on traditional sushi preparation. Ingredients of the highest quality are processed using traditional techniques to highlight hidden flavours in fish and vegetables. At lunchtime fine Chirashi Bowls, Chuuka Soba or Teori Sushi are served (vegetarian options available), while in the evening traditional dishes such as Tori Karaage, Tempura or Japanese Curry are served. A special ceremony is the Omakase Dinner (with advance reservation also as lunch possible). On this occasion up to 8 people sit at the Omakase Bar and let the Sushi Master surprise them with his creations (Chef's Choice). A performance lasts about 1.5 hours. The focus is on the classic Nigiri Sushi and small Kaiseki dishes. The price is CHF 120 per person incl. tea and dessert at the end.
